Job Description
Responsible for hand cutting legendary steaks on a daily basis.
ESSENTIAL FUNCTIONS
Essential Functions Statement(s)
* Cut fresh hand cut steaks daily.
* Following dimension guidelines set forth by TRH.
* Hitting and maintaining proper yields.
* Directly responsible for food cost.
* Responsible for security and sanitation of meat room.
* Participation in HERO award program.
* Participating in daily steak audits.
* Checking in all proteins and weighing boxes.
* Sanitation and break down of all meat room equipment.
* Proper understanding of daily prep sheets and par levels.
* Proper understanding of TRH shelf lives. Utilizes first-in, first-out rotation.
* Ability to properly jaccard items.
* Able to work in extreme cold.
* Quality, speed, and yields are the key objective of this job.
* Sets up meat display case on a daily basis.
* Performs opening and closing side work duties.
* Maintains proper uniform and hygiene standards at all times.
* The ability to have fun at work.

POSITION QUALIFICATIONS
Education: High School Graduate or General Education Degree (GED)
Experience: No prior experience necessary
Computer Skills: Word, Excel

Responsibilities
- Sharpen and adjust cutting equipment
- Receive, inspect, and store meat upon delivery
- Cut, bone, or grind pieces of meat
- Weigh, wrap, label and store cuts of meat
- Know and comply with proper storage standards
- Participate in product rotation, inventory, waste management and ordering of product
- Clean equipment and work areas according to sanitation standards
