Position Summary

The Skilled Sushi Chef is responsible for preparing high-quality sushi and Japanese-inspired dishes that enhance the guest experience at Spa Castle. This role requires advanced knife skills, deep knowledge of traditional and contemporary sushi preparation, and the ability to work with precision, speed, and creativity. The Sushi Chef ensures the highest standards of freshness, presentation, and food safety while contributing to a clean, efficient, and guest-focused culinary environment.

  • • Prepare sushi, sashimi, specialty rolls, and other Japanese-inspired dishes according to Spa Castle standards.
  • • Ensure all fish and ingredients meet strict freshness, quality, and safety requirements.
  • • Maintain expert-level knife skills for slicing fish, vegetables, and garnishes with precision.
  • • Create visually appealing plates that reflect traditional technique and Spa Castle’s presentation expectations.
  • • Manage station setup, restocking, and cleanup to ensure smooth and efficient service.
  • • Monitor and maintain proper storage, labeling, and rotation of all sushi ingredients.
  • • Collaborate with culinary management to develop new rolls, specials, and seasonal menu items.
  • • Maintain a clean, sanitized work area and follow all food safety and HACCP guidelines.
  • • Communicate inventory needs, product shortages, and equipment issues promptly.
  • • Uphold Spa Castle’s hospitality standards by providing a calm, professional, and consistent dining experience.
  • Qualifications
  • • Proven experience as a Sushi Chef or Sushi Cook in a restaurant, hotel, or high-volume environment.
  • • Strong knowledge of sushi preparation, fish handling, culinary safety, and Japanese cuisine fundamentals.
  • • Expert knife skills and ability to work efficiently with precision and consistency.
  • • Excellent attention to detail, organization, and cleanliness.
  • • Ability to work in a fast-paced environment while maintaining quality and accuracy.
  • • ServSafe or equivalent food handler certification preferred.
  • • Reliable, punctual, and able to work well as part of a culinary team.
  • • Ability to stand for long periods and lift up to 40 lbs as needed.
